Tomato Tofu & Veggie Scamble

Introduction

Typical hodge-podge of whatever was in the fridge. Typical hodge-podge of whatever was in the fridge.
Number of Servings: 4

Ingredients

    1/4 onion
    1 block extra firm tofu, cubed
    1 zucchini, sliced/diced
    1 carrot, sliced/diced
    3/4 cup frozen corn
    1/2 cup frozen spinach
    1 can white beans
    1 can Campbell's tomato soup

Directions

Saute tofu & onion in non-stick skillet coated with cooking spray. Toss everything else in as you slice it up, adding beans and tomato soup last.
Enjoy!
