2 large chicken breast, cooked and shredded
8 oz sour cream
10.5 oz can fat free cream of chicken soup
25 Ritz crackers
1 stick of butter, melted
This is a great base for many other recipes. Add veggies for a pot pie. Use noodles and cover with tin foil and it's a spaghetti bake.
My family gets large portions and this is a rich dish. If you use a smaller portion with a salad or steamed veggies the calorie count is different. (what I do)
Mix first 3 ingredients together and pour into a 13 x 9 casserole dish. Evenly pour crushed crackers over and drizzle melted butter on top.
Cook for 30 minutes or until crackers are browned and chicken mixture is bubbly.
