Sweet Roast Chicken

Ingredients

    8 chicken drumsticks (or thighs), skin removed
    3 sweet potatoes
    2 yellow or red peppers
    2 tbsp maple syrup

Directions

Preheat the oven to 200C/fan 190C/Gas 6. Remove the skin from the drumsticks or thighs and put the meat into a roasting dish.
Peel the sweet potatoes and cut into large chunks. Cut the peppers in half, deseed and cut into big pieces.
Add the vegetables to the chicken and roast for 35 minutes. Drizzle over the maple syrup and roast for another 15 minutes until the chicken is cooked and the vegetables are golden.
