Rice and Peas

Ingredients

    1 large clove garlic, minced
    1 onion, chopped (1/2-1 cup)
    2 T olive oil
    1 Packet Sazon con Cilantro
    1/4 cup Sofrito
    2 cups rice
    1 15 oz can green pigeon peas, drained
    1 cup tomatoe sauce
    3 cups water

Directions

Heat olive oil in large pan; add garlic and onion, saute until translucent. Stir in Sazon, Sofrito, rice, pigeon peas, water and tomato sauce. Bring mixture to a boil, stir well. Cover and reduce heat to simmer. Cook 20-30 mins. or until water is absorbed. Makes 12 1/2 cup servings
