Sour Cream Chicken Enchalatas

Introduction

Ingredients

    2 13 oz cans of members mark canned chicken
    12 corn tortillas
    2 can cream of chicken soup
    1 cup fat free sour cream
    1 can green chilies
    1 tsp chopped garlic
    1 cup chopped onion
    1 cup monterey jack cheese
    1 tbsp chili powder
    1 tbsp cumin powder
    1/4 cup chopped cilantro
    1 tbsp olive oil
    1/4 cup water

Tips

other variations; you may use chicken breast instead of canned chicken, or low carb flour tortillas. It is also very good using the kraft pepperjack cheese with a touch of cream cheese.


Directions

In a non stick skillet add olive oil, water, the 2 cans of drained chicken breast garlic, onion, 1/2 of cumin season and 1/2 of chili powder. Cook chopping up the chicken, and cook until onions are clear and soft.
mix cream of chicken soup, sour cream, green chilies, cilantro, and remaining chili powder and cumin, set aside. spread 1/4 cup mixture in bottom of baking pan. Mix 1/2 cup of mixture with the chicken mixture and scoop equal amounts in each tortilla and roll up and place seam side down. Cover with remaining sauce and cheese.
