Introduction

This slow cooked chicken is great for tacos or served on own! I served it in a flour tortillas topped with shredded cheddar cheese and fresh guacamole for my husband, and for myself I served it over quinoa and topped it with the guacamole (pictured). Ingredients

    1.5lb Boneless, Skinless Chicken Breast
    8 medium whole Roma Tomatoes, diced
    3 Jalapeno Peppers, de-seeded and cored, diced
    3 Serrano Peppers, de-seeded and cored, diced
    2 Limes worth juice
    3 cloves Garlic
    1 bunch Cilantro, coarse chopped
    1 bunch Green Onions, chopped - white and green
    1 tbsp Salt
    2 cubes Chicken stock (about 1/2 cup)
    1/2 cup Water

Tips

The stock cubes are homemade chicken stock frozen in ice cube trays.


Directions

Add raw, whole chicken breast halves to slow cooker and after dicing, add all ingredients. Set on high and allow to cook 5-6 hours.

Serving Size: Makes 4 one cup servings
