Chicken artichoke soup

Introduction

Ingredients

    Rotelle - Chopped tomatoes with green chilies
    Canned artichoke hearts (chopped)
    3 frozen boneless, skinless chicken breasts - cooked
    1 can of cream of chicken soup
    1 tsp black pepper
    1 tsp. cayenne pepper
    1 tsp. thyme
    1 box or 2 cans of chicken broth
    1 1/2 cups of water

Directions

Cook chicken in broth with water added. Cook until done and tender, remove from broth and allow to cool. Add cream of chicken soup and chopped tomatoes to broth and whisk to smooth out the creamed soup. Add spices (black pepper, cayenne, thyme) and simmer.
Shred chicken into small bite-sized pieces, and chop artichoke hearts into small bite-sized pieces and add both to broth and let simmer.

Serving Size: Makes about 10 - 1 cup servings
