Ingredients

For the burrito shell:
1/3 cup whole wheat flour
1/8 tsp baking powder
few pinches salt
warm water to form soft dough.
One chicken thigh skin and bone removed
salt, pepper, garlic powder, dash hot sauce[opt]
few tablespoons water for frying.
For the Dressing:
1/4 cup skim plain yogurt
1 tsp honey mustard
1 tbsp chopped cilantro
salt and pepper to taste
1 tbsp sliced purple onion
1 leaf lettuce shredded
Tips
You may use the same pan to make the burrito shell and cook the chicken thigh to save on dishes.
Directions
In a small bowl mix flour baking powder and salt with enough warm water to make a soft dough. Form into a ball and dip in flour , roll into a large round and fry without oil in a large teflon frying pan for a few minutes per side pressing with paper towel till a few brown spots appear and dough appears cooked.
In a small frypan place chicken thigh , sprinkle with seasonings and add a few tablespoons of water . Cook on medium heat till water evaporates and rendered fat glazes the chicken thigh. Cook till no pink is evident. Slice into 2 long pieces
Whisk all dressing ingredients in small bowl and assemble wrap as desired
Serving Size: makes 1 complete chicken wrap
