Black Russian Bagels

Introduction

Number of Servings: 12

Ingredients

    1 1/4 c warm water
    2 t yeast

    1 c rye flour
    1 c whole wheat flour
    1/2 c molasses
    1/3 c dark cocoa
    1 t salt
    2 c ap flour
    1 T caraway seed (optional)

    topping:
    mix salt, poppy seeds, sesame seeds, onion flakes, sesame seeds and garlic flakes

Directions

Proof yeast in warm water.
Add rye, wheat flour, molasses, cocoa, salt and mix. Gradually add white flour until a sticky dough develps.
Knead 10 min.

Let rise until double. Punch down, shape into 12 bagels.
Boil 1 gal water with 2T baking soda. Preheat oven to 400.
Briefly dip each bagel into boiling water, then place on sheet pan with parchment and cornmeal. Brush with a beaten egg and sprinkle with everything topping.
Bake at 400 for 20 minutes.
