Introduction

Number of Servings: 8

Ingredients

    1.5 lbs ground chicken
    1 lg. red belled pepper, large dice
    1/2 cp soy sauce
    2 T rice wine vinegar
    1 T grated fresh ginger
    5 dashes hot pepper sauce
    1 t sesame oil
    1/2 cp chunky peanut butter
    3 T hot water
    5 dashes hot pepper sauce
    8 lg leaves lettuce
    2 carrots, shredded
    1 T chopped green onions
    1 T chopped fresh cliantro


Directions

cook and stir ground chicken in a skillet until the meat is crumbly and no longer pink, about 10 min. Drain excess grease. Stir red pepper and cook until siftened, about five minutes.

Whisk 1/2 cup soy sauce, vinegar, ginger, 5 dashes pepper sauce and sesame oil in a bowl; pour over chicken mixture. Cook and stir until flavors have blended, about 5-10 minutes.

Mash peanut butter and hot water until smooth, stir in 3 T soy sauce and 5 dashes hot pepper sauce. Set dipping sauce aside.

form lettuce leaves into cup shape and fill with chicken mixture. Top lettuce wraps with shredded carrots, sprinkle with green onion and cilantro, and a spoonful of dipping sauce.
