Nikki's Breakfast Casserole

Introduction

Ingredients

    1 lb. ground sausage or bacon
    1 small Sweet Vidalia onion, chopped
    8 large eggs
    1.5 cup 1% lowfat small curd cottage cheese
    2 cups 2% Mexican cheese blend shredded cheese
    .5 cup buttermilk, lowfat
    2 Tb. olive oil
    1 tsp celery salt
    1 tsp onion powder

Tips

I add a little pepper to the casserole before cooking, but it is not necessary. I like to serve with salsa and sour cream.


Directions

Preheat oven to 400 degrees. In a non-stick skillet heat olive oil. Add chopped onion and saute 5 min. Add ground sausage and cook until browned. While that is cooking, whisk eggs in large mixing bowl. Add seasonings and buttermilk. Add both cheeses and stir vigorously until blended. Using a slotted spoon, transfer browned sausage and onion to bowl and stir until combined. Pour into casserole dish that has been sprayed with non-stick cooking spray. Cover with aluminum foil and bake for 35 minutes. Remove foil and bake 10 more minutes.
