Sweet peppers (bell), 2 medium
Ground beef, lean, 10 oz
Onions, raw, 0.5 large
Garlic, 3 clove, minced
Red Ripe Tomatoes, 0.5 cup, chopped
Mushrooms, fresh, 0.5 cup, finely chopped
Mozzarella shredded Part Skim cheese, 0.5 cup (160 cals worth)
In a hot skillet, sauté the meat and add any seasonings you'd like (use beef and taco seasoning! or ground chicken and ranch!). Stir. Drain the fat.
Add the tomatoes, mushrooms and cheese. Stir until cheese is melted and remove from heat. Set aside.
Fill the peppers with filling. Pour water into baking dish until the bottom is covered. Tightly place the filled peppers into the baking dish. Cover each with a foil "cap" and bake for 35 minutes. After 35 minutes, uncover, add a little cheese, and broil to give it a nice finished top if you'd like.
