Vegetarian stuffed tomatoes

Ingredients

    5 large tomatoes
    1 small chopped onion
    1 chopped red pepper
    1 Tbs chopped garlic
    1 large chopped russet potato
    2 cups chopped parsnips
    1 tsp oregano
    1 tsp ground sage
    salt & pepper to taste
    1 tsp olive oil
    3/4 cup shredded fat free sharp cheddar cheese

Directions

Cut off top of tomatoes and scoop out seeds and pulp.
Place in baking dish.
Saute all chopped vegetables and seasonings until tender adding vegetable broth as needed to moisten.
Stuff tomatoes and top with cheese.
Bake at 325 for 30 - 40 minutes.

  • DH hates parsnips so added mushrooms instead cut down on the fat by steaming the veg and altered the amount so we had enough for two people. Great for Lunch served with toast - 3/23/13
