Roasted Butternut Squash

Introduction

Simple. Use any vegetable or spice you want. Watch the oil. A little goes a long way. Simple. Use any vegetable or spice you want. Watch the oil. A little goes a long way.

Ingredients

    One butternut squash cut up into large chunks
    One medium yellow onion - sliced
    2 TBsp olive oil
    salt and pepper to taste



Tips

You can also add other veggies such as broccoli, carrots, beans etc. Try to keep size of pieces consistant.


Directions

Mix squash, onions, olive oil and spices together in a bowl. Mix to coat all veggies with the olive oil. Place in pan and Roast in 375 degree oven for 3- to 45 min. Shake pan occassionally. Lenght of time depends on how large the chunks are cut.
