Pork Fried Rice

Introduction

A great side dish or main course! A great side dish or main course!
Number of Servings: 10

Ingredients

    2-1/2 cups long grain white rice
    12 oz lean pork, cooked & diced
    1/2 green pepper, diced
    1 red pepper, diced
    1/2 medium onion, diced
    1 cup fresh broccoli, chopped
    16 oz. pkg. Asian stir-fry vegetables
    2 eggs
    1-1/2 tbsp sesame oil
    1/2 cup low sodium soy sauce

Directions

Cook rice per package directions and set aside.
In large frying pan, heat sesame oil.
Fry eggs in oil, then chop and push to side.
Add vegetables and stir fry until crisp tender.
Add cooked pork and soy sauce and heat through.
Each serving yields: 1 cup.

    I would use brown rice instead of white rice and sparingly use the soy sauce even if it is low sodium! - 4/11/11

  • I presume you have to whisk the eggs first? I am going to make this, but omit the capsicums, (they don't agree with me), and use brown rice. Sounds Yummmy.....

    No need to whisk the eggs first. They cook up more like fried eggs rather than scrambled.
