Spicey Shrimp over Spanish Rice

This is a great recipie that I just made up one night for my own healthier version of Aroz con Camarones. This is a great recipie that I just made up one night for my own healthier version of Aroz con Camarones.Number of Servings: 6
Ingredients

8oz of cooked shrimp
3 cloves of minced garlic
2 tbs of salt
1 tbs black pepper
1 tbs red pepper flacks (to taste)
1 can of sun dried tomatoes (fire roasted)
2 cups fresh chopped mushrooms
1/2 cup chopped onions
2 tbs ketchup
monterey cheese for topping
Tips
If you want to cut the calories skip the cheese, it will cut over 100 calories. Also if you like it spicy add red chili powder, enjoy my family did.
Directions
heat oil and butter in a large pan over medium heat. Then add mushrooms, garlic and onion until tender. Then add the chopped zuchinni, salt, pepper, red peppers (optional), tomatoes and ketchup. mix well and bring to a boil reduce heat and simmer for 15 min until the liquid is reduced by half. Add shrimp and cook on low for 10 min season with a dash more salt. Serve over 1 cup of spanish rice and top with cheese.
