Skillet Pork Chops

Ingredients

    400g of Pork Chops
    2 Tins Tomatoes
    1 Tbsp Tomato Puree
    1 Medium Onion
    1 Tbsp Worcester Sauce
    2 Tbsp Vegetable Oil
    1 Tbsp Arrowroot
    1 Sprig Parsley
    1 Tin Sweetcorn (about 260g)

Directions

Season the chops, fry them in oil about 2 minutes each side. Remove from the heat. Puree the tinned tomatoes, worcester sauce and tomoto puree in a blender and then pour over the chops. Finely chop the onion and add to the chops along with the drained sweetcorn. Bring back to the boil and season, cover the pan and cook over a moderate heat for about 25 minutes. Remove the lid and reduce the sauce a little and cook for a further 10 minutes. Mix the Arrowroot with a little water and add the sauce, cook until clear. Garnish with the parsley and serve.
