Low Cal red cabbage soup

4 cups shredded red cabbage
1 large yellow onion sliced
1 8 oz can low sodium V8 juice
2 cups cauliflower
garlic powder to your taste
black pepper to your taste
any other herbs you may like
add as much water as you need to cover vegetables
2 wedges light laughing cow cheese ( optional)
you can blend the cooked soup in a blender if you want ...if I do this I add 2 wedges of laughing cow cheese to give it a creamier texture. YUMMY!!!
