Introduction

add other spices to your liking, skip the noodles get some fiber with white beans

Number of Servings: 8

Ingredients

    1lb chicken breast
    64oz chicken broth
    1 med onion chopped
    3 carrots chopped
    3 celery stalks chopped
    1 clove of garlic small dice
    1 T olive oil
    2 bay leaves
    1 t salt
    1 t pepper
    parsley to taste
    1 14oz can bushes great northern beans

Directions

in soup pot simmer whole chicken breast in 64 oz of chicken broth with 2 bay leaves. In saute pan heat oil saute onion, carrots celery and garlic until shiny. Add to soup pot. Once chicken is cooked through remove from pot. on plate use two fork to shred meat to bite size pieces then return to pot cook on a simmer until vegetables are tender season with salt and pepper to taste. Add one can of undrained bushes great northern beans heat until bean are hot, serve.
