Cheesy Cauliflower Soup
1 medium cauliflower head use the florets
1 1/2 c. Matchstick carrots
1 med onion
2 cans chicken broth 99% fat free
2 chicken bullion cubes
4 tbls butter
4 tbls flour
4 1/2 cups 1% milk
2 cups shredded reduced fat cheddar cheese
4 slices provolone reduced fat cheese
1 1/2 tbsp parsley flakes
1 1/2 tsp salt
1/4 tsp nutmeg
1/8 tsp of each cayenne pepper, white pepper, curry
Cook first 5 ingredients until veggies are tender. Meanwhile, in a sauce pan, melt butter, stir in flour until bubbly. Gradually add milk til thickened slightly. Cook 2 or 3 minutes more. Melt in cheeses and add spices. Pour into cauliflower mixture. Cook very slowly don't boil. The recipe says for 30 minutes. I cooked on low only 10 minutes.
