Onion & Celery Soup - Low Sodium

Introduction

Number of Servings: 8

Ingredients

    2 Tbsp olive oil
    2 yellow onions, sliced
    1 scallion, chopped
    1 shallot, sliced
    1 leek, sliced
    1 cup celery, diced
    1 dash salt
    1 tsp black pepper
    8 tsps Herb Ox Sodium-Free Granulated Chicken Bullion
    8 cups water
    3 Tbsp freeze dried chives

Directions

1. In a medium saucepan, bring water to boil. Add bullion, stir until dissolved. Transfer broth to a heat-safe bowl and set aside.

2. In same saucepan, heat oil on medium-high. Add onion, celery, and salt, cook 5 minutes, stirring occasionally.

3. Add leek, scallion, and shallot, cook an additional 5 minutes, stirring occasionally.

4. Return broth to saucepan, reduce heat to low and simmer 20 minutes. Add pepper to taste.

5. Serve with a pinch of chive to garnish.

Serving Size: makes 8 1-cup servings
