Vegi Chow Mein

Number of Servings: 10

Ingredients

    3 cups cabbage, grated
    1 cup red cabbage, chopped
    3 cups grated carrots
    2 cups bean sprouts
    1 medium onion, chopped
    3 cloves garlic, minced
    2 tblsp. olive oil
    2 cups baby spinach
    3 cups mushrooms, sliced stems and pieces
    1 cooked boneless skinless chicken breast, shredded
    6 tblsp soy sauce
    6 tblsp. garlic chili sauce or Thai chili sauce

Tips

I sometimes add water chestnuts broccoli slaw and Chinese noodles


Directions

Saute onion and celery in oil until tender, add garlic and mushrooms. Saute until mushrooms are tender. Add chicken and all other vegetables and cook, stirring occasionally for about 10 minutes. Add soy sauce and chili sauce and let cook an additional 5 minutes.
