Remarkably Delicious Meatloaf

Introduction

Every person who's ever tried this has said it's the best meatloaf they've ever had... Every person who's ever tried this has said it's the best meatloaf they've ever had...

Ingredients

    1 lb extra lean (90/10) ground beef
    1 lb lean ground pork (I like Penzey's)
    1 T breakfast sausage seasoning
    1 T Mrs. Dash (your favorite blend)
    2 T dried minced onion
    1/4 cup egg substitute
    1/2 cup rolled oats
    1/4 cup parmesan cheese
    1/2 cup ketchup
    1/4 cup Jamaican jerk sauce (I prefer Blue Mountain)

Tips

I occasionally use ground venison in place of the ground beef. Similarly, I sometimes use prepared turkey breakfast sausage in place of the ground pork and breakfast sausage seasoning. I've also used leftover couscous or quinoa in place of the oats.


Directions

Preheat oven to 350 degrees. Mix beef, pork, seasonings, onion, egg substitute, oats and parmesan cheese until well combined. Press mixture into a 8x4x2.5 (or something relatively similar) loaf pan. Mix ketchup and jerk sauce until thoroughly combined. Pour ketchup/jerk sauce mixture over the top of the meatloaf. Bake for 75 minutes. Allow to cool 10-15 minutes before slicing. Drain any accumulated fat from the pan. Cut into 8 equal slices.
