Chorizo was something I really missed once I started dieting, then I discovered how easy it is to make sausage from extra lean ground meats. Yay! Ingredients

20 ounces 95% lean ground pork
1/4 cup apple cider vinegar
1/4 medium onion, diced
3 cloves of garlic, chopped
1 Tbsp crushed red pepper
1/4 tsp cinnamon
1/2 tsp cumin
1/2 tsp paprika
1/2 tsp oregano
1/4 tsp cayenne
1 tsp salt
Tips
If you have time, let the sausage sit in the refrigerator for several hours before cooking to let the spices permeate the meat more fully.
Directions
Combine all in a large bowl and smoosh together until the spices are evenly distributed throughout. It's easier to use your hands than a spoon.
Fry crumbled until thoroughly cooked.
