Lemon Blueberry Biscuits

Introduction

These little gems are very tastey. My kids just love them. These little gems are very tastey. My kids just love them.
Number of Servings: 12

Ingredients

    2 cups flour
    1/2 cup sugar
    2 tsp baking powder
    1/2 tsp baking soda
    1/4 tsp salt
    1 carton (8 oz) lemon yogurt
    1 egg, lightly beaten
    1/4 cup coconut oil (melted)
    1 tsp grated lemon peel
    1 cup fresh or frozen blue berries

    GLAZE:
    1/2 cup icing sugar
    1 tbsp lemon juice
    1/2 tsp grated lemon peel

Directions

In a large bowl, combine dry ingredients. Combine yogurt, egg, coconut oil and lemon peel; stir into dry ingredients just until moistened. Fold in blueberries. Drop by tablespoonfuls onto a baking dish covered in parchment paper.

Bake 400 degrees for 15 - 18 minutes or until lightly browned. Combine glaze ingredients; drizzle over warm biscuits.
