Turkey Meatloaf

Introduction

I tried several recipes but was never truly satisfied. I created this one and found it to be very moist and flavorful. I used potato flour instead of my usual oats because I was fearful the oats would draw up too much moisture and turkey is much more dry than ground beef. Number of Servings: 8

Ingredients

    1 lb ground turkey
    1 lg egg
    1 8 oz. can tomato sauce
    1/2 c chopped onion
    1/4 c chopped green bell pepper
    3 cloves garlic, minced
    4 T potato flour
    1/4 tsp black pepper
    1 tsp salt
    1 T olive oil
    1 tsp butter
    5 tbl ketchup
    2 tbl brown sugar, packed

Directions

Put olive oil and butter in skillet over medium high heat. When butter is melted and skillet is hot saute green pepper and onion. Add this to the ground turkey along with the egg, tomato sauce, minced garlic, salt and pepper. Add potato flour one tablespoon at a time until meat mixture holds well together.

Bake at 350 degrees for 1 hour. Top with ketchup brown sugar glaze and bake for an additional 15 minutes.

Serving Size: Makes 8 sliced servings
