Primal Blackened Chicken & Cauliflower Casserole

Introduction

Number of Servings: 4

Ingredients

    Cauliflower, raw, 1 head, large (6-7" dia)
    Chicken Breast (raw, boneless, skinless), 8 oz (remove)
    *Kraft Shredded 2% Mexican Four Cheese blend, 1 cup
    Yogurt, plain, low fat, .25 cup (8 fl oz)
    Cajun Seasoning, 3 tsp
    Garlic powder, 1 tsp
    Onion powder, 1 tsp
    Almond Breeze Almond Milk, Original, 2 oz (remove)
    Butter, salted, 1 tbsp (remove)

Directions

Blacken chicken breast.
Stir together onion powder, garlic powder, almond milk, butter and 1/2 of the cheese.
Cook and stir until well blended.
Cook cauliflower until very soft.
Drain.
Add to beef mixture.
Pour into 8x8 pan, top with cheese and bake @ 350 for 30 min.
