6 medium baking potatoes
6 garlic cloves, crushed
2 tbsp butter, softened
1/2 cup fat-free milk
1-1/2 tsps. minced fresh rosemary or 1/2 teaspoon dried rosemary, crushed
1/2 tsp. salt
1/8 tsp. pepper
Cut a thin slice off the top of each potato and discard. Scoop out the pulp, leaving a thin shell.
In a bowl, mash the potato with butter. Stir in milk, rosemary, salt, pepper and roasted garlic.
Pipe or spoon into potato shells. Place on an ungreased baking sheet. Bake at 425* F for 20-25 min. or until heated through.
Garnish with cheese, sour cream, and/or chives (not included in nutritional info)
