Texas Style Chili with Bison and Wild Boar

Introduction

Very hot texas style chili, serve with crackers and low fat cheese shreds. Used a hot Chili Molido powder from the local ethnic market. You can dry and grind your own chili if available. Ingredients

    Bear Mountain Bison Patty, 16 oz
    Durham Ranch Ground Wild Boar, 16 oz
    Onions, raw, 2 medium (2-1/2" dia)
    Garlic, 16 cloves
    Chili powder, 2cups
    Water, tap, 2 cups
    Imagine Low Sodium Beef Broth, 4 cup
    Cinnamon, ground, 1 tsp
    Ground Cumin, 2 tsp
    Trader Joe's Organic Unsalted Plum Tomatoes, 8 cup

Tips

Could be more than 16 4 oz servings, it's just a guess, the container it went in was about the size of half gallon milk container.


Directions

In a large cast iron skillet or dutch oven saute Bison and Boar, when brown and crumbly add diced onions and garlic, stir. Combine 1 cups chili powder with one cup hot water to form a paste, add to meat mixture, combine. Sprinkle with cinnamon and cumin, stir again. Pour in 4 cups low sodium beef broth, scrape up brown yummies. Bring to boil, lower heat to a simmer. Simmer for 1 hour, stir each time you pass by. Puree tomatoes add to meat. Check for thickness, add 1 more cup or more of water, cook an additional 60 minutes. Let rest for 30 minutes to verify final consistency.
