6 c Water
2 lb. Chicken pieces
1 Raw Onion
1 tbsp. Kosher Salt
1 c Carrots
2-3 stalks Celery
1 tbsp Parsley
"Stab" the onion all around to help the liquids go through it, bringing out the flavor.
I like to use chicken thighs, which I've removed the skins. You can use whatever pieces you like, or even an entire chicken.
When water is at a rolling boil, add chicken and turn temp down to simmer.
Cook for approx. 2 hours and then add carrots, celery and some parsley flakes.
Serving Size: makes 8-1 cup servings
