Taco Casserole

Introduction

A great tasting low calorie Mexican dish! A great tasting low calorie Mexican dish!
Number of Servings: 8

Ingredients

    5 baked boneless/skinless chicken thighs. finely chopped
    1/2 c. onions chopped
    1/2 c. bell peppers chopped
    1 clove garlic minced
    1pkg taco seasoning mix
    1 c. taco sauce
    1 c. low fax small curd cottage cheese
    1. cup low fat sour cream
    1. cup multigrain tortilla chips broken up
    1. cup shredded Fiesta Blend Cheese
    1 can black beans

Tips

serve with salsa if desired.


Directions

Heat oven to 400. spray bottom of a 2-qt casserole dish; set aside.
Saute onions, peppers and garlic in about 2 tbsp olive oil until tender. Add seasoning mix, taco sauce and beans until heated; set aside.
in medium bowl, combine sour cream and cottage cheese; set aside.
place 1/2 the chips on the bottom of the casserole dish. add meat mixture to cover the chips, then cover the meat with sour cream mixture. Sprinkle cheese and remaining crushed chips. Baked, uncovered, for 30 minutes or until cheese has melted.
