Curried Red Lentil Soup

Ingredients

1 1/2 cups red split lentils
10 cups chicken broth
2 large potatoes
5 medium carrots
1 cup yellow corn
1 tsp cracked black pepper
2 1/2 tsp curry powder
2 tsp salt
1/4 tsp crushed red pepper
Tips
If you would like it less spicy, feel free to skip the crushed red pepper. The 1/4 tsp gives it a nice kick!
Directions
1. Bring the chicken broth to a boil, then add lentils. Return to boil and simmer for 10 minutes.
2. Add grated potatoes and carrots. Simmer for 5 minutes.
3. Add corn and last 4 ingredients. Simmer for 20 minutes. Blend with a hand blender until smooth.
4. Season to taste and serve with a wholemeal roll or with a side salad.
