1/4 cup sunflower oil (olive oil used in nutrients)
2 Tbsp Red Wine Vinegar
1 Tbsp honey
1/2 tsp ground cumin
fresh ground pepper
1 can (540ml) each red kidney beans, chickpeas, and romano beans, drained and rinsed
1/3 cup fresh parsley, chopped
3/4 cup feta, diced
1 cup canned mandarins (drained)
1 cup green grapes, halved
Can add 1/2 cup roasted slivered almonds (not included in ingredient break down).
Add remaining ingredients. Stir and serve.
Serving Size: Makes 8 1-cup servings
