Chicken Keilbasa Stew

Introduction

This recipe makes a lot of stew that can be served for a crowd, or saved in the fridge or frozen. It has lots of vegetables and spices that can be changed to suit you taste.Can be served over noodles for carb lovers! Use a crock pot at least 6 quarts in size for the quantities mentioned. Ingredients

    6 lbs Chicken breasts
    1 lb Low-fat polish or Turkey kielbasa
    2 cans low fat cream of chicken soup
    1 can low fat cream of mushroom soup
    8 oz low fat sour cream
    1 12 oz jar Heinz Chicken gravy
    1 lb baby carrots
    1 1/2 lg green peppers
    1 large onion
    4 large stalks celery with tops
    2 large zucchini (4 cups)
    3 8 oz boxes mushrooms
    1 can sweet corn (15.25 oz)

    Spices: Good Seasons dry salad mix, garlic powder, poultry seasoning, salt & pepper

    Roue: 4 tblsp "I can't believe it's not Butter"- light, plus 2 oz flour, OR cornstarch

Tips

For the quantities mentioned, use a crock pot at least 6 quarts big.


Directions

Spray Skillet with butter spray, and brown chicken over medium high heat. Coat them generously with all spices while cooking. While they're browning, turn the crock pot to High for 6 hours, and put in the Cream of Soups, chopped onion,cut carrots and green peppers. You can add more spices to taste in the Crock pot. Cut the browned chicken into 2 inch pieces and put in the Crock pot. add the celery cut into 1 inch pieces.Let this cook for about 4 hours.Cut the mushrooms and microwave for 6 minutes, then drain. Cut zucchini and cook for 4 minutes in microwave and drain. Drain corn. Mix together gravy and sour cream in a bowl with more spices plus the 3 drained vegetables. Add this about 2 hours before the meal is ready.Once the chicken has cooked for 6 hours, you'll probably need to thicken the gravy by making a roue on the stove top with the butter and flour, or by adding cornstarch in a pot on medium high. Either of these methods can be done by ladling out as much liquid as possible from the Crock pot heated up with your choice of thickening ingredient. Once thickened, return gravy to crock pot. Heat for another hour.
