1 package chopped spinach
3 cups chopped mushrooms
2 cups chopped onions
2T olive oil
10 eggs, scrambled
4 oz milk or milk substitute
2/3 cup shredded cheese
herbs de provance
Can be made with any vegetables and you can add protein (like ham, sausage, seasoned ground beef), or other meat.
Bake in 350 degree oven for approximately 30-45 minutes. The mixture will rise similar to a souffle when done.
Serving Size: makes 12 cupcakes (and a few extra)!
