Breakfast Frittata Muffins

Ingredients

    1 package chopped spinach
    3 cups chopped mushrooms
    2 cups chopped onions
    2T olive oil
    10 eggs, scrambled
    4 oz milk or milk substitute
    2/3 cup shredded cheese
    salt
    herbs de provance




Tips

Can be made with any vegetables and you can add protein (like ham, sausage, seasoned ground beef), or other meat.


Directions

Preheat oven to 350 degrees. Saute onions in olive oil until golden brown. Add mushrooms and cook about 10 minutes, then add spinach and seasoning and heat through. Remove from heat. Spray cup cake tin with cooking spray. Portion spinach mixture into each cup, do not compress. (there may be extra veggies, you can make additional portions). Scramble eggs with milk. Pour into each cup until almost full (do not compress). Sprinkle with cheese.

Bake in 350 degree oven for approximately 30-45 minutes. The mixture will rise similar to a souffle when done.

Serving Size: makes 12 cupcakes (and a few extra)!
