Introduction

this is a slightly sweet dish using plentiful fall ingredients. this is a slightly sweet dish using plentiful fall ingredients.
Number of Servings: 6

Ingredients

    canola cooking spray to coat large skillet
    3 cups peeled, seeded and cubed butternut squash
    1 cup orange juice ( juice yielded from four oranges)
    2 large apples, peeled, cored, and cubed
    1 cup fresh cranberries, chopped
    1/8 tsp curry powder
    1/4 tsp nutmeg
    1/4 tsp coriander
    1/2 tsp cinnamon
    3 Tbsp honey
    1/4 cup chopped waluts



Tips

I use ground walnuts but if you use too many it will take over the other flavors


Directions

Peel and remove seed from a medium butternut squash. Cut squash into 1/2 inch cubes. Peel & core 2 apples Large cutting into 1/2 inch cubes Chop 1 cup cranberries using a food processor or chopper. spray a large skillet with cooking oil place butternut, apples and cranberries in skillet. Mix together curry powder, nutmeg coriander and cinnamon. Sprinkle spices over top of squash mixture. add one cup orange juice and honey . Cook over medium low heat and cover. cook until squash and apples are tender . Sprinkle nuts over mixture. cover and remove from heat. Let stand 15 minutes to blend flavors
