Jalapeno Bake

Introduction

Threw this together while hubby was watching the play-offs. Easier than poppers and much more filling. We plan to add elk burger on a future casserole. Hubby suggested rice as a base as an alternative to the corn muffin mix. It's here for safe keeping. Threw this together while hubby was watching the play-offs. Number of Servings: 12

Ingredients

    1 box Jiffy Corn Muffin Mix (makes 6 servings)
    1 egg
    1/3 - 1/2 cup 1% milk
    3 slices bacon, cooked and torn into bits
    8 jalapeno peppers, halved and seeded
    3/4 cup shredded cheddar (I use full-fat for the flavor)
    4 Tbsp light cream cheese

Tips

Because this recipe has extra milk than recommended on the package, extra bake time may be required.

Add a layer of ground meat to make this a meal rather than side. Make 6 servings instead of 12.


Directions

Cook bacon. Blot excess grease with paper towel. (you may use paper towel to season cast iron)
Make mix according to package directions, adding a bit more milk to make it less dense. Mix in bacon pieces.

Set the peppers atop the muffin mix. Bake 15 minutes at 400oF. Meanwhile, cream together the cheeses.

Remove from oven. Fill the peppers with the cheese mix. Return to oven. Bake additional 10 minutes.

Serving Size: Makes 12 appetizers
