Hummus Casserole (DF)

Ingredients

    1 1/2 cup of the Hummus recipe (makes 2 cups)
    1/2 cup water

    1 large carrot shredded (about 1 cup)
    1 cup cooked chopped spinach, squeezed dry
    1 cup zucchini unpeeled and diced
    1/4 cup green onions green parts only - chopped
    2 cups cooked brown rice

Tips

You can substitute Quinoa or couscous for the rice.
Serve with flat bread or tortilla chips.


Directions

Preheat oven to 350 degrees
Prepare the Hummus according to directions and place in large bowl, mix in the water.
Add carrots, spinach, zucchini, green parts of the green onions, and cooked brown rice. Stir well.
Pour into a 9x13 baking pan sprayed with cooking spray.
Bake uncovered for 20 minutes.
