1.25 pounds boneless skinless chicken breast
4 oz can whole green chiles
1/3 cup cornmeal
1/3 cup cheddar cheese
2 TBS taco seasoning
Place cheese and 1 whole chile on each breast. Tuck the ends and roll like a jelly roll.
Whisk egg in one bowl.
In another bowl, combine the cornmeal and taco seasoning.
Dredge rolls through the egg and then cornmeal mixture.
Bake at 375 for 35 minutes or until done.
