South of the Border Pizza (DF)

Ingredients

    CRUST
    1 1/2 cups cornmeal
    1 cup whole wheat flour
    1 cup warm water
    1 Tbsp olive oil
    1/2 tsp cumin
    1/8 tsp cayenne pepper

    SAUCE
    1 (15 ounce) can pinto beans, do not drain
    2 tsp garlic minced or chopped
    1/2 tsp onion powder

    TOPPINGS
    1 cup salsa (Daniel Fast friendly)
    2 cups corn, drained and roasted
    4 ounces tofu
    1 tsp taco seasoning Daniel fast friendly(see notes)
    1/2 cup roasted red bell peppers
    1/2 cup black olives chopped
    1/4 cup onion chopped
    1/4 tsp cumin

Tips

If you don't have Taco Seasoning you can use
1/2 tsp cumin
1/2 tsp garlic powder
1/4 tsp salt
1/8 tsp cayenne pepper


Directions

Preheat oven to 450 degrees
Mix crust ingredients together in bowl or food processor till dough forms a ball.
Rub a little flour on a rolling pin and roll out 3 circles for crusts.
Place each crust on preheated pizza pans sprayed with cooking spray.
Poke holes in dough with a fork
BAKE 10 minutes and remove from oven.

While crust is baking, prepare Tofu crumbles.
Heat olive oil in skillet and add Tofu and taco seasoning. Cook 2-3 minutes

When crust is done, remove from oven and spread pinto bean sauce and Salsa on top. Add other toppings as desired.
Bake 15-20 minutes
Let sit for 5 minutes before serving

Serving Size: serves 3 hungry people
