Chilli Tofu Soup

Ingredients

Tofu, firm, 200 grams
*Hot Chili Peppers, 3 pepper
Garlic, 3 cloves
Ginger Root, 1 tsp
*Soy Sauce, 4 tbsp
Tabasco Sauce, 1 tsp
Chicken Broth, 3 cup (8 fl oz)
Carrots, raw, 1 medium
Mushrooms, fresh, 3 medium
Shallots, 2 tbsp chopped
*Coriander leaf, dried, 1 tbsp
1tbs olive oil
Tips
Good for colds.
Directions
1. Cut the tofu into cubes and marinate in tabasco sauce and soy sauce.
2. Dice the chilli, garlic and ginger add to hot oil and cook until aromatic.
3. Add the tofu including marinade and cook in pot for about a minute.
4. Add the chicken broth and diced carrots and mushrooms. Bring to boil.
5. Add star anise, cloves and bay leaf. Bring to simmer for about 20 minutes.
6. Add corander and shallots (diced) and serve.
