Introduction

Number of Servings: 10

Ingredients

    2 cups cubes butternut squash
    1 med yam cut into cubes
    2 large carrots
    3 med leeks
    1 lg potato
    3 clovess garlic chopped
    1 tsp grated ginger
    6 cups vegetable broth

Directions

Saute leeks, garlic, and ginger in butter til soft. Add potatos, yam, carrots, squash and mix until coated in butter. Add broth. Simmer on low for 2 hours. Once all vegetables soft, puree wih a hand blender. Enjoy
