White Rice, long grain, 4 cups
MorningStar - Black Bean Chipotle Burgers, 2 patties
Del Monte Diced Tomatoes, No Salt Added, 1.75 cup (1 can)
Crushed Red Pepper, 1 tsp
Minced Garlic, 1 tsp
Frozen Corn, 2/3 Cup
Butter, .5 tsp
Shallot 3 tbsp (about 1 small one, finely chopped)
Pan-fry black bean burgers according to directions in a non-stick skillet until heated through.
Cook shallots with butter then add garlic, crushed red peppers, and diced tomatoes to skillet.
Chop black bean burgers into 1" pieces, then add to tomato. Cook over medium heat until heated through.
Serve rice onto plate and top with tomato and black bean sauce.
