Healthy Applesauce-Cinnamon-Oatcake

Introduction

Healthy oatcake! Yummmy plum amazins and warm spices make for moist cake. (sub raisins or other dried fruit if wanted, nutrition will be different though).

Number of Servings: 8

Ingredients

    Water 1.5 cup
    Rolled Oats 1 cup
    Plum Amazins, 1 cup
    Salt, .25 tsp
    Brown Sugar, .5 cup, unpacked
    Applesauce, unsweetened, 1 cup
    Whole Wheat Flour, 1.5 cup
    Baking Soda, 1 tsp
    Ginger, ground, .5 tsp
    Cinnamon, ground, .5 tsp
    Nutmeg, ground, .75 tsp
    egg white, fresh, 4 large
    Vanilla Extract, 1 tsp

Directions

Line 13 x 9 in pan with foil and lightly grase with cooking spray

Preheat oven to 350

Bring water to boil in medium saucepanover med-high.
Stir in oats. When liquid returns to a boil add plum amazins and salt. Reduce heat and sinmmer 4-5 min until oats are soft and liquid absorbed.

Remove from heat and stir in brown sugar and applesauce. Cool to lukewarm.

In large bowl stir togeather flour, baking soda, ginger, Cinnamon, and nutmeg. Mix well.

Whip up egg whites to stiff peaks and add vanilla extract (optional step, but makes for more rise).

Stiir egg mixture into oats. Stir oat mixture into flour mixture. Mix until just combined and moistened.

Pour into baking pan and bake for 30-40 minutes, or until the cake begins to shrink form the sides and a toothpick inserted into the center comes out clean. Cool for 5 minutes. Lift cake out of pan with foil and set to cool on cooling rack.

Serving Size: 8 large 3x4 in pieces
