Potato Salad a la Bacon

Introduction

We usually cook this using 1 pound of applewood bacon, but have also used 1 pound of pepper bacon to add a little bit of flavor. We usually cook this using 1 pound of applewood bacon, but have also used 1 pound of pepper bacon to add a little bit of flavor.

Ingredients

    5 lbs red potatoes
    3 hard boiled eggs
    1 lb bacon *we usually use applewood or pepper bacon
    1.5 cups celery (about 5 stalks)
    1 cup chopped sweet pickles
    2 cups Best Goods mayo
    1/4 cup sweet pickle juice
    1 tbsp white distilled vinegar

Tips

We have added shaved carrots, black olives, mini pepperonis, just whatever hits your fancy to add to the potato salad. It's yummy!


Directions

Wash red potatoes, put in pot & boil until you can puncture with fork (leave them a little al dente)...once potatoes have cooled, cut in bite size pieces, throw in very large bowl.

Mix mayo with 1 tbsp white distilled vinegar (for a tang) and sweet pickle juice; pour about half over potatoes and mix well.

Chop eggs up. Chop up celery. Chop up green onions. Chop up sweet pickles. Throw all into bowl.

Microwave bacon until nice & crispy. Break into small pieces, throw into potatoes too.

Add last half of mayo mixture & mix well. Add salt and pepper and other seasonings to taste.

If potato salad seems dry, add more mayo mixed with sweet pickle juice or just juice to moisten. Mix well.
