Heather's Pretty Tuna Salad

Introduction

Tuna salad with veggies and real mayo. Lower fat and fat free mayonnaise include starches that don't work in our gluten free household. I think some real mayonnaise on occasion is okay. The shredded carrot and green scallions make this a pretty salad Put it on whole grain bread, or serve it with other protein and vegetables, if you're eating low carb like me. Ingredients

    2 Large cans of tuna (12 ounces)
    About 1 half cup of mayonnaise (or less, add just enough along with the dijon mustard to make it creamy adding lemon juice is another way to add moisture without so many calories)
    dijon mustard
    1 carrot shredded
    2 stalks celery, chopped into a small dice
    3 scallions, white and light green parts minced
    dried dill
    salt
    freshly ground pepper

Directions

Mix the drained tuna with the mayonnaise and mustard and mash it with a fork to break up the tuna chunks. Mix in the dill and chopped vegetables. Add the salt and pepper to taste.

Serving Size: Makes 3-4 cups
