Introduction
Made this to use up some left over shrimp. There were 10 medium. Served with Gluten Free Pasta. Was an excellent dish the family wants again. Made this to use up some left over shrimp. Ingredients
Olive Oil, 0.50 tbsp
Feta Cheese, 2 oz
Canned Tomatoes, 1 can
Shrimp, raw, 5.5 oz I used 10 medium
Artichokes, frozen, 1 package (9 oz) OR CANNED RINSED AND QUARTERED
Oregano, ground, 1 tbsp
Hot Pepper Sauce, 2 tsp 0R MORE TO TASTE
Tips
You can add more Feta or have it on the table for those that want extra.
Serve over rice or pasta.
Directions
Saute garlic in olive oil. Add red peppers and quartered artichokes for 10-12 minutes. Then remove from pan
Add shripm to hot pan and let cook for 1 -2 minutes. Flip over and add all the other veggies back on top of the shrimp Cook for 1 minute
Add the canned tomatoes, and the Oregano.
Tossing the mixture together. Cook down for another minute or two.
Remove from heat to a dish that can be covered. Toss in the 2 ounces of Feta, toss and cover. letting the dish sit for a minute or 2 so that the cheese starts to melt into the sauce.
Serve over rice, or pasta.
