I baked (or cooked) whole medium sized potato, hot or cold
1 tablespoon onion (chopped)
1/4 cup creamed cottage cheese
1/4 cup red cabbage, shredded
1/4 cup cucumber, chopped
1/2 teaspoon ground Sumac (optional)
Add fresh chopped herbs of choice (eg: basil, chives, coriander) and/or any other fresh salad vegetables that appeal to you
Cut the potato open and stuff with filling.
Serve in a bowl.
