I mix and match ingredients with this recipe and use whatever I have on hand, but that changes the nutrition info. You can use any kind of veggies and sometimes I chicken instead of tuna. Number of Servings: 8

Ingredients

    1 cup water
    1 cup milk
    2 cans tuna
    1 can cream of soup (any kind)
    8 oz. sour cream
    1 cup rice
    1/2 cup shredded cheddar cheese
    1 cup diced green pepper
    1 cup diced onion
    1 cup sliced mushrooms
    1 cup frozen peas
    2 cloves garlic minced

Directions

mix water, milk, cream of soup, and sour cream together pour in a lightly greased 9 x 13 baking dish. Add rice, green peppers, onions, mushrooms, peas, and garlic. Bake at 425 degrees for 60 minutes. Add shredded cheddar cheese and bake an additional 5 - 10 minutes.

Serving Size: Makes eight 1 cup servings
