Introduction

I also add raisins, All Bran Buds or Grape Nuts, and sometimes oatmeal. You'll need to add more milk if you do. You want the mix to be not thin, but not real thick. Add some pumpkin pie spice too! Ingredients

    1/4 c HODGSON MILL MILLED FLAX SEED
    1 1/2 c HODGSON MILL 50/50 FLOUR
    1/2 c sugar (you can substitute the sugar with honey or brown sugar)
    2 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    1 egg, beaten
    1 1/2 c finely chopped apples
    3 Tbsp. vegetable oil
    1/2 c milk
    1/2 c chopped nuts


Tips

Makes 12 muffins. Each muffin: 175 calories; 2 g dietary fiber; 23 g carbohydrates; 4 g protein; 9 g fat (less than 1 g saturated fat); 19 mg cholesterol; 227 mg sodium.


Directions

Blend dry ingredients together in a bowl. In a separate bowl; combine egg, vegetable oil and milk. Add dry ingredients to egg mixture and stir until just blended. Fold in apples and nuts. Batter will be thick. Fill well-greased muffin cups 2/3 full. Bake at 400 degrees F. for 18-20 minutes or until top springs back when touched. (I usually cook them for 12-15 as I like them moist)
